Diamond Cuts Recipie - Kerala :)


My Mom is very famous for these ... Diamond Cuts! You can even make it without Sugar & still enjoy the crunchy / Munchy Style :)

Recipe: (From Pachakam.com)

All Purpose flour( Maida) - 2 cups
Egg- 1/2 of an egg beaten well
Water - around 1/4 to 1/2 cup to make a smooth dough
Salt - 2 pinches.
Cardamom powder - 1/4 tsp
(optional)
Oil - for deep frying.
Sugar - 1 cup
Water - 4 tsp

Preparation Method of Diamond Cuts Recipe

1)Mix flour, egg, salt and cardamom powder long with enough water to make a smooth dough.Knead very well to incorporate all the ingredients.

2)Cover the dough with a damp cloth and leave in the kitchen counter for around 15-30 mts.

3)Dust the kitchen counter with enough flour.

4)Divide the dough into equal parts and start working on one ball at a time, meanwhile leaving the other balls under the cloth.

5)Flatten the dough ball into a rectangle shape using a rolling pin and cut out equal strands of ribbons.

6)Now make slanted cuts in one ribbon voila you got diamond shaped cuts.

7)Repeat the steps for rest of the leftover dough balls.

8)Heat a wok with enough oil and fry the cuts out (few at a time).

9)The cuts will puff up and ends will start browning up.
:- This is the perfect cooking for the cuts.

10)Drain them in kitchen towel and keep aside.

11)Mix water and sugar on a stove top and you get a threadlike consistency.

12)Coat the diamond cuts with the sugar syrup and keep them aside for cooling down.
:- You can dip diamond cuts in the syrup and drain them using a slotted spoon.

13)Once the cuts are cooled, store them in an airtight container.
